You'd be seen as indecisive and lacking direction by an interviewer. ("Gee, you sure changed jobs a lot, didn't you?" Uh, maybe you did that because it was all you could get? Wait a minute, by saying that, you reveal that you're a loser, at least in their way of thinking, and the company doesn't want any of those.)

I agree with having a varied background, though, as it makes one more flexible, but, more importantly, a lot of work that one does overlaps with other fields and disciplines, so it helps to have some familiarity with those.
