If you want a quick skillup, do the great circle of tanaris - there's lots and lots of mithril nodes along the edges, and at least two thorium nodes (one in thistleshrub valley, the other on one side or the other of the caverns of time). Un'Goro is also a great place to mine, provided you watch every step, and are ready to run like the wind at a moment's notice. There's also the badlands.

The big problem is finding rich thorium nodes. They seem to respawn very infrequently, and are picked off very early in the day. I've only found one so far in Un'Goro, and it netted me 4 thorium, an arcane crystal (kaching!), 2 star rubies (now part of my mithril dragonling), and a blue sapphire. It was a good morning.
Depends on the server. I still find lots and lots of copper in the newbie zones, and iron is abundant as well. Not that I bother with it much anymore - mithril, truesilver and thorium are the only nodes that I'll go out of my way for. I've been leveling engineering on my paladin since level 20 - at level 51 I'm at 282, with the end in sight now that I've built the cool trinkets I want and can waste some materials solely on leveling it up the rest of the way. * -- * PV something like badgers--something like lizards--and something like corkscrews.
